What to do with all that kale?

So you’ve purchased a bunch of kale, made a couple salads, but still have a few pounds of kale left!

Salad is fun, a couple times a week! But what are you to do with all of that kale?

Here’s are 4 easy and healthy ideas to help ensure those leafy greens won’t go to waste!

But firstly, what are the benefits of kale?

•Kale has 2.5 grams of protein per cup
•High in Vitamin K (bone health)
•High in fiber
•Antioxidant (cancer fighting)
•Good source of Vitamin A & C
•High in calcium

Now let’s get cooking!

1. Kale Wraps!

Make these veggie kale wraps in under 5 minutes! Just add some peppers, kale, cheese and honey dijon!

2. Quinoa Topper!

•Cook quinoa as directed on package
•Dice up kale, green onions, peppers, and or tomatoes
•Add 1 tbsp of olive oil and 1 tsp of lemon juice per cup of quinoa
•Mix it up and enjoy

3. Pizza night!

Pizza kits are the best! With whole wheat & thin crust options now available, you can make a homemade pizza that the whole family can enjoy!

We made half meat and half veggie (for me) The left side toppings include:

Giant olives, orange & red peppers, cheese and kale!

You can also substitute the pizza sauce with a pesto mix and scratch the cheese.

4. Scrambled eggs!

Whether you are a vegetarian or not, this quick veggie protein wrap will give you all the energy you need! For lunch, dinner, or a post work out snack!

Protein:

•Avocado
•Black beans
•Hummus (Chickpeas)

This meal was as quick to whip up as this post! No excuses! 🙂

Fun With Guacamole!

Dress up your sandwich with roasted red peppers, a poached egg and avocado!

Guacamole:

Guacamole is so easy to make!
My version uses a very ripe avocado, lemon juice and pepper.

Roasted red peppers:

Brush your peppers with melted coconut oil, and sprinkle a dry
pesto seasoning on top.

Poached egg:

Poaching eggs usually ends in a disaster. For me anyways!
My quick and simple trick, is ez pz!

•Fill a coffee cup with 1 cup of hot water
•Crack egg and slowly pour into cup
•Microwave for 90 seconds or until cooked
•Pat egg dry with a paper towel

Healthy and exciting dinners don’t have to be difficult. Just add your own touches, your favorite veggies and you can’t go wrong!

Vegan + Grain Free + Peanut Butter + Pumpkin Breakfast Bars!

A quick recipe for a healthy breakfast or post workout snack! It’s on the go and it’s so easy to make! If you’re looking for a semi-clean protein packed bar that squashes all those sweet cravings, this is it!

Ingredients:

•1/2 cup pure pumpkin purée
•3/4 cups natural peanut butter
•4 tbsp honey or maple syrup
•1/2 tsp vanilla extract
•1/4 tsp salt
•4 tbsp coconut shredded coconut (set aside)

Method:

•Preheat oven to 350 degrees F
•In a medium sized bowl, combine all ingredients except the coconut
•Mix until smooth
•Place parchment paper on a large baking pan
•Scoop one heaping tbsp of mix onto pan and shape into 7 bars or 14 small cookies
•Distribute coconut onto bars and press down with a spoon
•Bake for 14-17 minutes – check after 12 minutes
•Let pan and bars cool completely for 15 minutes to set

Breakfast for a week!

Tips:
•If you have a peanut allergy, use coconut or almond butter
•These bars are a soft texture, cook for an additional two minutes if desired
•Bars can be frozen to enjoy later!
•Add 1/4 cup dark chocolate chips to mix for the sweet tooth in you + an extra 2 tbsp of honey or syrup
•Add 1/4 cup of nuts or seeds + an extra 2 tbsp of honey or syrup to bind together

Egg & Avocado Bowl

My BF sent me a post of this yummy idea the other day. I had to try, add my touch and of course, share it!

If you are looking for a protein boost, and want a delicious, healthy and no mess brunch, you must try this yummy egg baked in avocado recipe! You won’t regret it!

What you need:
Avocado
Free run egg
Pepper
Lime

Extra:
Parsley
Gluten free tomato & cheese crackers
1 cup of berries

How to make:
Preheat over to 450F
Clean and cut ripened avocado in half
Remove pit, then scoop out about another 1-2 tablespoons of avocado
Squeeze a little lime juice in center of avocado
Crack egg over top so the yolk fits
Sprinkle pepper
Bake for 10-12 minutes (until white, and yolk is runny)
Garnish with parsley!

Enjoy!
