Spicy shrimp & summer Greek potatoes!

An easy, fresh and healthy meal – perfect for warm summer nights!

Serves 2!

Summer Greek potatoes:

3 white potatoes
1 organic fine herb bouillon cube (Brand: Harvest Sun) or vegetable bouillon cube
2 pinches of black pepper
1 tbsp vegetable oil
1/4 tbsp dried tzatziki mix (dried or fresh dill, garlic & lemon juice)
2 tbsp honey Dijon

How to make:

In a medium sized pot – bring water, oil, bouillon cube and pepper to a boil
Add potatoes & continue boiling on medium high heat for 20-30 minutes, or until potatoes fall off the fork
Drain – stir in tiziki mix & honey dijon & cool
These can be mashed too if boiled until soft (add 1/2 tbsp butter)

Spicy shrimp:

20 large cooked shrimp
3 tbsp of Goya hot sauce
1/3 tbsp roasted garlic
2 pinches of ground black pepper
1/2 tbsp Vegetable oil

How to fry:

Thaw & rinse shrimp
In a container combine shrimp, hot sauce, garlic & black pepper
Cover & shake until evenly coated
Heat oil in pan on medium/high heat
Add shrimp, juice/herbs to frying pan and fry on medium heat for 3 minutes per side

Place shrimp beside potatoes and serve with edamame beans!

Kefir Blueberry Smoothie!

Kefir, a wonderful source for healthy digestion, it relaxes your nervous system and helps you sleep better!
It has been known to help treat bronchitis, pneumonia, gastric illnesses and more! Kefir can get rid of those crazy food cravings too!

Kefir contains a ton of animo acids and good bacteria. It is also very helpful to pregnant and nursing woman!

I incorporate it into my diet by eating a tablespoon a day, by itself, or in my cereal and smoothies!

Here’s a quick and tasty recipe:

I’ve added a handful of spinach, a tablespoon of organic kefir, a serving of lactose free yogurt, and 1 cup of frozen Canadian blueberries!

Just don’t eat this one on the go, or you will have blueberry teeth & purple lips to match!

Flax on flax off!

Ground flax seeds play a very important role in anyone’s health, especially woman.

It can be hard to add flax seeds to your daily meals, but adding it to your baked goods, pasta sauces, cereals, smoothies or oatmeal makes it easy!

Flax seed is a super fiber! Is high in antioxidants, helps lower cholesterol, has been know to reduce hot flashes in woman, helps manage symptoms during HRT and during pre/post menopause, plus it’s high in Omega-3!

1-2 tablespoons of ground flax seed a day is sure to get you on your way!

Avocado for breakfast, lunch or dinner

I can’t say enough about this power fruit! I could literally eat it every day, and so should you!

Here’s why:
-Helps lower cholesterol
-Maintains healthy weight loss (makes you feel full)
-Protects against eye disease (Vitamin E)
-Tons of fibre
-Contains vitamin D, K & B6

Cheers to a quick, easy & delicious breakfast:

Avocado (half)
Rye toast
Organic honey (1/2 tbsp)
Goat cheese (Sprinkle)

French Onion Soup – Slow cooker

What you need:
4 yellow onions sliced into rings
6 cups of beef broth
1 cup organic vegetable broth
(OR a total of 7 cups of vegetable broth)
***I used 6 cups of beef broth & 1 cup of organic vegetable broth***
1 tbsp sugar
A couple shakes of ground pepper
2 cloves of garlic minced
6 tablespoons of margarine
1 tbsp balsamic vinaigrette
2 tablespoons of all purpose flour

French bread
2 tbsp margarine
1 cup shredded marble cheese

Heat margarine in frying pan
Slice onions into rings and add to pan, cook for 10 minutes
Sprinkle sugar onto onions and cook on medium heat for 25mins – or until brown and soft
Add garlic to pan and cook for 2 minutes

In slow cooker, add broth, flour, vinaigrette and pepper
Slowly add onions to slow cooker, scrape pan and include the bits, garlic pieces and margarine
Cook on high for 3-4 hours or Low for 6-8 hours
Divide soup into small bowls

Slice french bread about 1/2 an inch thick
Butter bread
In frying pan, grill one side until brown & crisp
Flip bread, add cheese on top and cook until melted/other side of bread is also grilled
Place bread on top of soup!
